Speculation is that Meredith may have also been the father of Nancy Catherine Henshaw.12
Note that Jane Hinshaw #2610 was also born in North Carolina and also settled near Senatobia, DeSoto (now Tate) County, Mississippi. It is possible that Meridith and Jane might have been closely related (perhaps siblings, first cousins etc.).26 Note also that Jane's brother William was the progenitor of the line of Hinshaws/Henshaws/Hanshaws of Jackson County, Alabama. Both Jane and her brother William were known to have migrated through Franklin County, Tennessee.
Note also that Jane's nephew, Eli Hinshaw, settled in Panola County, Mississippi,12,27,28 which is also where Jane's husband died.
Because of his connections to North Carolina, Tennessee and Alabama, it is likely that Merideth descended from the Hinshaws of North Carolina.29
There is a record in the LDS International Genealogical Index (IGI) which claims Meredith was the son of Jesse Hinshaw & Eunice Gifford.30 The IGI record came from a member submission, so no corroborating source information is indicated. While Meredith's approximate birth date and place would be consistent with this claim, there is no other known evidence connecting him with that family (and there were many other Hinshaw families in North Carolina at the time which could be equally likely).
This person's ancestry is unknown!
