Carl's obituary was published in "The Sun-Sentinel Ft. Lauderdale" (Ft. Lauderdale, Florida) on September 14, 1997:1

Carl Franz Hinshaw Jr., a self-taught chef who transformed Chalet Suzanne of Lake Wales, Fla., from a small but well-known family-run bistro into a critically acclaimed restaurant, died Sept. 4 at his home near the restaurant just north of here.  He was 75.  The cause of death was cancer, his family said.  Mr. Hinshaw, who joined his mother, Bertha, in managing the family business in the 1940s, helped bring wider attention to the restaurant by introducing European traditions to its management and menu.  He also began a line of fine soups, including its signature romaine soup.  The soups were later sold under the Chalet Suzanne label in supermarkets nationwide.  Chalet Suzanne dates to 1931, eight years after Bertha and Carl Hinshaw Sr. moved to Lake Wales from Maquoketa, Iowa, where Carl Jr. was born.  The elder Hinshaw died in 1931, leaving his family nearly penniless, having lost his life savings in the stock market crash of 1929.  But Bertha Hinshaw had her house, which was ornately decorated with European-style spires and towers.  She decided to support her family with her culinary talents and soon opened the restaurant as a bistro catering mainly to tourists.  Carl Jr. grew up at the restaurant and joined the family business when he returned from overseas duty as a pilot in World War II.  The same year, in 1947, he married his high school sweetheart, Vita Peterson.  Mr. Hinshaw had no formal training as a chef but learned by watching his mother.  His cuisine soon began to win acclaim, and the restaurant became a Florida institution.  In addition to his wife, Mr. Hinshaw is survived by a son, Eric; a daughter, Tina Farewell; a sister, Suzanne Otto, of Tiburon, Calif.; and eight grandchildren.  In recent years, as his illness progressed, Mr. Hinshaw began delegating the culinary duties at the Chalet to Farewell.  His son said last week that family members intended to take over management of the restaurant.  "It's something that is going to endure," Eric Hinshaw said.  "It's not going to die with my dad."

Vita died Jun 16 2012, at her daughter's home, Chalet Suzanne, Lake Wales, Polk County, Florida; age 89.13

LAKE WALES - Mrs. Vita Hinshaw, 89, passed into Heaven on Saturday morning, June 16 2012, in her daughter's Lake Wales home at Chalet Suzanne, surrounded by her loving family.  

Vita was born in Omaha, Nebraska, in 1922 then moved to Hollywood, Florida, with her parents.  Lake Wales was their destination in 1928.  She graduated from Lake Wales High School in 1939 at sixteen years old.  Her father died suddenly the week before Pearl Harbor was bombed in 1941.  Soon the patriotic young woman enlisted in the Navy WAVES (acronym for Women Accepted for Volunteer Emergency Service), where she remained throughout World War II.  

She was the matriarch of the world renowned Chalet Suzanne.  

Mrs. Hinshaw is survived by her sister Elizabeth (Pete) Petersen Levy, daughter Christina (Tina) H. Farewell and her husband Bob, their five children and four grandchildren, as well as her son Eric Hinshaw and his wife Denise (Dee), their three children and one grandchild, and four nieces and three nephews.  

She was preceded in death by her mother and father, Thomas and Claire Bulwan Petersen, her brother John E. Petersen, son Carl F. Hinshaw, III, daughter Heidi Claire Hinshaw, several babies born into heaven, and her husband of fifty years, Carl F. Hinshaw, Jr.  

A public Celebration of Life will take place on Friday, June 22 at 9:00 AM on the grounds of Chalet Suzanne.  Private interment will be that afternoon at the Hinshaw Family's Memory Garden.
