Chalet Suzanne awaits grand vision
LAKE WALES -- Nearly two years after the Chalet Suzanne closed its doors, the fabled pink restaurant and inn remains in limbo.
Owner Eric Hinshaw said he and his wife, Dee, have postponed putting the 130-acre property on the market following a February 2015 auction of furnishings, equipment and memorabilia.
"We’re just following our hearts," he said, adding that he’s considering moving forward on listing the property in "a little bit."
It was Hinshaw's grandmother, Bertha, who turned her lakeside home into an inn following the death of her husband, Carl, in 1931. Their son, Carl Jr., and his wife, Vita, helped expand Chalet Suzanne's reputation, winning accolades for its luxurious, prix fixe menu and a signature appetizer of sugar-glazed, broiled grapefruit topped with a chicken liver.
Its soup cannery received a boost when astronauts aboard Apollo 15 and 16 carried the Chalet's spinach and mushroom recipe to the moon.
In 2002, the restaurant was named to Florida Trend's Golden Spoon Hall of Fame. It consistently earned The Ledger's highest rating of five stars.
The Hinshaws have sold off a few parcels, mostly to relatives, but the bulk of the large estate remains unsold.
Eric Hinshaw said he has turned down offers from developers who want to build homes on the property that’s partially secluded by orange trees and sits a short distance east of Eagle Ridge Mall. He invites offers from anyone with a grand vision for the property, which is zoned tourist commercial and includes an FAA-licensed public use airport and runway.
Eric and Denise currently (1999-2007) still reside in Lake Wales, Polk County, Florida.3,7
